From the Intro: "When the Editor of this book visited the United States in 1945, he found a marked interest expressed in the idea of an illustrated Swedish cookbook in the English language containing typical and well-known Swedish dishes. Subsequently, Swedish Food was planned. The idea of the book won first prize in its group in a tourist souvenir contest sponsored by the Swedish Tourist Traffic Association, the Swedish Handicrafts Association and AB Nordiska Kompaniet, Stockholm, in 1946. Swedish Food is the work of the Home Economics Department of the publisher [Esselte] in collaboration with Mrs. Emmie Berg, graduated from Cordon Bleu, Paris, and former resident of Montclair, N.J., who has compiled and edited the recipes especially for this book. All recipes have been tested and the pictures set up in the Department's own kitchens by an expert staff. Some recipes have also been tested by a Home Economics Consultant in the United States. The publisher and the editor wish to express their gratitude to all those who have contributed to the planning and production of this book, which we hope will find its way to many English speaking homes interested in Swedish culinary art."
